Change of paradigm: Dark chocolate is commonly known as bitter or semi-bitter chocolate. We are changing this paradigm. We are able to produce delicious chocolate full of natural tones and without off-flavors by being a bean-to-bar factory( we have 100% control of the process) and using single origin “Fine Aroma Arriba Cacao” beans that absorb aromas from flowers and fruits that grow around them,.
Since our FSSC 2200 - GFSI factory is located in Ecuador, we can choose the right cocoa beans for the different cacao content chocolate e.g. light floral cacao beans for 85% chocolate or fruity intense cacao for 55% chocolate.
Maximized cacao nutrients: We do not alkalize nor over-roast the cocoa beans to get rid of the unpleasant off-flavors, because those chemical processes significantly reduce the cacao’s flavonoids ( antioxidants ). Our “Fine Aroma Arriba Cacao” beans have unique natural tones and flavors, it does not need any chemical process to hide off-flavors.
Natural Sugar-Free sweeteners with No-Aftertaste: We master the art of finding the right combination of the best natural sweeteners (Stevia, Monkfruit, Thaumatin) with the “Fine Aroma Arriba Cacao” beans from Ecuador which has been used for decades for the best chocolatiers in the world. Non-alkalized: Alkalization kills most of the cocoa nutrients. We do not use over-roasting, over-conching or alkalization. We maximize the preservation of the cacao nutrients.

These extracts are hundreds of times sweeter than sugar. They have to be used in a combination of low potency sweeteners and sometimes with fillers too.
-Monkfruit: or luohan guo extract is 100 to 250 times sweeter than sugar. It is very popular in the US because it is one of the best tasting high-potency natural sweeteners. It has antioxidants and other health benefits. Glycemic index: zero.
-Stevia: Stevia rebaudiana extract 200 to 300 times sweeter than sugar. It is approved in the US and Canada. We use a type of stevia that has an imperceptible after taste. Glycemic index: zero.
-Thaumatin: is a natural plant protein 2000–3000 times sweeter than sugar. It can be a good addition to the formulations depending upon the chocolate bitterness. Glycemic index: zero.
Their sweetness is lower than sugar. They work in combination with High-Potency Sweeteners like monkfruit and stevia. They have a double purpose: sweeteners and fillers.
-Erythritol: is found naturally in grapes, peaches, pears, watermelon,wine, beer, and cheese ferment. It has 70% the sugar sweetness and its glycemic index is zero. It is the perfect match with monkfruit, stevia and thaumatin.
-Allulose: is a rare sugar. It has 70% the sugar sweetness and its glycemic index is zero. It is works well with monkfruit, stevia and thaumatin.
-Trehalose: Trehalose is a naturally occurring, non-reducing sugar found in abundance in nature. It has 70% the sugar sweetness and its glycemic index is fifty eight approx.
Their sweetness is very low. They work in combination with High-Potency Sweeteners like monk fruit and stevia and Low-Potency sweeteners like Erythritol. They are used as fillers.
-Resistant Dextrin: does not release glucose, but rather reaches the large intestine where it is consumed or fermented by colonic bacteria (gut microbiota Prebiotic).
-Inulin: Inulin is a type of prebiotic. It stays in the bowel and helps certain beneficial bacteria to grow. Found in a wide variety of fruits, vegetables, and herbs, including wheat, onions, bananas, leeks, artichokes, and asparagus.
